  • Seasoned Fresh Pork Tenderloin
  • 1 Tablespoon olive oil
  • 1 onion
  • 1/2 cabbage
  • 1 large apple
  • 1/2 cup Cider

Instructions

  1. Heat a skillet on medium high heat while you prepare the ingredients.
  2. Mince the onion and chop the cabbage. Peel, core and slice the apple. Slice the pork tenderloin into medallions about 1 1/2 inches wide. You should end up with 8-10 medallions.
  3. Add olive oil to the hot skillet and add the onion. Stir for 1 minutes. Then push the onion to the side of the skillet and sear the meat, browning 3-4 minutes on each side.
  4. Remove the pork from the skillet and set aside. Cover to keep warm.
  5. Add apples and cabbage to the skillet and saute for 5 minutes.
  6. Return the pork medallions to the skillet. Pour the cider or apple juice over the top and cook for 5 more minutes, or until the pork reaches an internal temperature of 145 F.
