- 2 tablespoons light brown sugar
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons sweet paprika Note 1
- 2 teaspoons thyme
- 2 teaspoons fine sea salt or kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon rosemary Note 2
Instructions
Pork roast seasoning:
- Measure all the spices in a medium bowl. 2 tablespoon brown sugar + 2 teaspoon garlic powder + 2 teaspoon onion powder + 2 teaspoon sweet paprika +2 teaspoon thyme + 2 teaspoon salt + 1 teaspoon pepper + 1 teaspoon rosemary
- Mix with a spoon or a whisker until well combined, ensuring there are no clumps or pockets of individual spices.
- Store: Transfer to an airtight container and store in a dark cool place away from direct sunlight.

How to use it?
- Pat the pork roast dry with paper towels.
- Sprinkle the seasoning mixture over the meat and rub it into it, ensuring it is evenly coated on all sides. Let sit for a few minutes to allow the flavors to penetrate.
- Cook the pork roast according to your recipe.
Notes
- Paprika: You can use 1 teaspoon of sweet and 1 teaspoon of smoked paprika powder if you like. Use the best quality you can afford; cheap paprika is entirely tasteless.
- Add about ½ teaspoon of red pepper, red chili flakes, or cayenne pepper to taste for a spicy version.
- There is enough seasoning for 2 pork roasts.
