Pork Schnitzel

This recipe for Pork Schnitzel is so easy and tasty you'll make it over and over again. Served on a bun or with vegetables or salad, this dish is always a hit!

Ingredients
- 6 pork cutlets, tenderloin or leg steaks Sometimes our grocery store sells pork schnitzel or pork cutlets already beaten and thin
- 1 large egg
- ¼ cup milk
- ½ cup all-purpose flour -
- 2 cups breadcrumbs -
- ¼ cup olive oil more or less as needed
- 2 cups mozzarella cheese, shredded more or less as desired
- ½ cup peppers, any color, cored, seeded and thinly sliced
- ½ cup mushrooms, fresh, sliced
- ½ cup onions, thinly sliced optional
- 1-2 tablespoons garlic, minced

Instructions
- Prepare a rimmed baking sheet covered with parchment paper and set aside.
- Prepare mushrooms, onions and peppers. In a large skillet, over medium to medium high heat pour a tablespoon or two of oil. Wait until it shimmers or a drop of water flicked in it dances. Add mushrooms and stir regularly. After a few minutes add onions and after a few more minutes add peppers. Once to your desired liking remove vegetables from heat and add garlic. Stir until incorporated. Set aside.
- At your workstation prepare a plate with flour, another with breadcrumbs and a bowl with egg and milk.
- Place oil in a large skillet over medium to medium high heat and wait until the oil is ready.
- Preheat your oven to broil.
- Pound your pork until it is in very thin pieces. At your workstation dip individual slices of pork into the flour until it is lightly coated. Next coat in the egg mixture and lastly in breadcrumbs.
- Place in your skillet. Repeat the process until all of your pieces are golden brown and cooked, 2-3 minutes per side.
- Remove from oil and place on your prepared cookie sheet with rack. Add cheese and place under broiler for a few minutes and cheese is melted. Top with sauteed mushroom mixture and serve.
Notes
- Cutlets can be kept warm in your oven set at 250 degrees F until needed.
