Ingredients
- 1 pound port tenderloin
- Olive oil for coating meat
Pineapple Salsa
- 1/2 cup diced pineapple
- 1/4 cup red onion minced
- 2-3 tablespoons fresh cilantro chopped
- 1 tablespoon lemon juice
Cocoa-Spiced Rub
- 1 teaspoon ground black pepper
- 1 teaspoon ground coriander
- 1 tablespoon cinnamon
- 1/4 teaspoon allspice
- 1 tablespoon cocoa powder unsweetened
- 1 teaspoon chili powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- For the salsa, in a small mixing bowl combine the pineapple, onion cilantro and lemon juice. Set aside.
- In a small bowl whisk together all rub ingredients. Lightly brush on olive oil over the whole tenderloin. Cover prepared seasoning rub over the tenderloin.
- Place mean on a baking sheet and cook for about 15-20 minutes or until the internal temperature reaches 145 degrees. Let the meat rest for 5 minutes before cutting it in slices.
- Serve with pineapple salsa
