Ingredients

  • 10.5 ounces pork thinly sliced
  • 1/2 tablespoon white sugar
  • 3 tablespoons oil
  • 2 cloves garlic chopped
  • 1 teaspoon dark soy sauce
  • 1 tablespoon Golden Mountain Sauce
  • 2.5 tablespoons oyster sauce
  • 3 tablespoons water
  • 1/2 teaspoon white pepper
  • 1/2 onion chopped
  • 3.5 ounces mushrooms straw mushrooms
  • 1 Chilies see notes
  • 0.7 ounces green onions cut into 2-inch sized pieces

Instructions

  1. Sprinkle sugar over the pork slices in a bowl and toss to coat evenly. Let it rest for 30 minutes to tenderize the meat.
  2. Heat oil in a wok and sauté garlic until fragrant.
  3. Add the pork slices to the wok and stir-fry until they start to cook.
  4. Add the stir-fry sauces (dark soy, golden mountain, oyster sauce, water) along with the white pepper and onion slices. Thoroughly mix and cook until the onions are soft to your liking.
  5. Toss in the sliced chilies and mushrooms, mixing it with the rest and cooking it until the mushrooms are soft yet tender.
  6. Finish by gently stirring in green onions and serve hot with rice.

Notes

  • Chilies: I used large Thai chilies known as prik chi fa. These are not only about the spice, but also about adding color and chili flavor.
