Portobello Mushrooms with Wine and Thyme
Portobello mushrooms sautéed with sliced onions, garlic, and a splash of white wine are gently simmered with fresh thyme until the liquid evaporates, creating a flavorful side dish. The mushrooms reduce in size, softening in the buttery pan juices while absorbing aromatic herbs and savory seasonings.
Ingredients
- 2 Tablespoon butter salted or unsalted
- 1 onion sliced
- 9 Ounces portobello mushrooms sliced
- ¼ Teaspoon black pepper ground
- ½ Teaspoon salt to taste
- 2 garlic pressed or finely chopped, cloves
- ⅓ Cup white wine your favorite

Instructions
- Heat up a skillet with the butter. Wait for it to melt.
- Add in your sliced onions. Sauté the onions translucent.
- Stir in all the sliced portobello mushrooms. Cook them so that they reduce and sauté gently.
- Season with ground pepper, salt and chopped or pressed garlic.
- Once the mushrooms have reduced in size, pour in the white wine and keep on high to medium heat. Stir, cook for 1–2 minutes.
- Add the Thyme and reduce further on slow heat until all the liquid is gone.
- Serve hot as a side dish with beef steak, roasted chicken, turkey, pork chops, poached salmon or vegetarian meatless meals. See the suggestions in the post.
Notes
- Fresh thyme is recommended for best flavor; dried thyme or omission is acceptable as an alternative.
