  • 6 small white potato chopped into 2 inch pieces
  • 2 plum tomatoes , chopped 2 inch pieces
  • 1 small onion , sliced
  • 1 clove garlic , minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp parsley chopped, fresh

Instructions

  1. Preheat oven to 400 F degrees.
  2. Coat bottom of casserole dish with olive oil.
  3. Add chopped potatoes first, then onions, tomatoes, and garlic.
  4. Top with rockfish steaks.
  5. Sprinkle salt, pepper, paprika, and parsley.
