  • 4 egg whites 120 grams at room temperature
  • 1 cup of sugar 200 g
  • zest of a lemon optional

Instructions

  1. Preheat the oven to 150°C (302°F), If your oven has a lower heat setting then set it to the lowest.
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Place the egg whites into a clean and dry mixing bowl.
  4. Beat using a hand mixer at medium-low speed for about two minutes until you see bubbles begin to appear on the surface.
  5. Increase the mixer speed to high and beat until stiff peaks are reached.
  6. At high speed, add portions of sugar to the meringue (a tablespoon at a time) until all the sugar is incorporated. Add the lemon zest and mix until blended.
  7. The meringue should be glossy and smooth.
  8. Fill a piping bag with the meringue using a star or round tip. Swirl meringue onto lined baking tray separating them about 1 inch apart.
  9. Place the tray into the oven and leave the oven door ajar.
  10. Bake for 45-60 minutes. To check if the meringue kisses are ready if it removes from the tray without sticking they are ready. Meringue cookies should be crispy on the outside.
  11. Keep stored in an airtight container.
  12. Enjoy!
