Ingredients

  • 4 tablespoon butter
  • 1 cup chopped onion
  • 6-8 cloves garlic minced
  • 3 packets Sazon seasoning like Goya Azafran
  • 12 ounce pale lager beer
  • 1-2 tablespoons hot sauce If you can find African Peri Peri Sauce, buy it!
  • 1 ½ pounds large raw shrimp peeled
  • salt and pepper
  • Parsley for Garnish

Instructions

    Cup of Yum
  1. Set a large sauté pan over medium heat. Add the butter, onions, and garlic. Sauté for 3 to 5 minutes to soften the onions, stirring regularly.
  2. Once the onions are soft, add in the Sazon seasoning packets. Mix the seasoning into the onions. Then pour in the beer and hot sauce. Simmer the sauce for 5 to 8 minutes to reduce and thicken.
  3. Once the sauce has reduced by half, add in the raw shrimp. Stir well and allow the shrimp to simmer for 3 to 5 minutes. Then remove from heat.
  4. Serve over rice with a sprinkling of parsley, or with flatbread on the side.

Notes

  • Also, try on shrimp tacos, or as a low-carb dish with cauliflower rice.
  • Leftover cooked shrimp will keep well in the refrigerator for up to 3 days, but I recommend enjoying it within a day or so. Reheated shrimp can tend to get a bit rubbery, so reheat in the microwave or on the stovetop low and slow just until warm throughout.
