Ingredients

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/4 cup onion finely diced (optional)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • vegetable oil for frying

Instructions

  1. In a large bowl, mix the mashed potatoes, egg, flour, onion (if using), salt, and black pepper until well blended.
  2. Heat a thin layer of vegetable oil in a skillet over medium heat. Scoop heaping tablespoons of the potato mixture into the hot oil and flatten slightly.
  3. Fry until golden brown on both sides, about 3-5 minutes per side.
