Potato salad with arugula and a fatfree cilantro dressing

Lovely basic salad with simple ingredients and a fat-free dressing made from honey or maple syrup, lemon and cilantro (or parsley). Mix it with arugula or other leafy greens.

Ingredients

  • 4 4 cups potato in cubes (600 grams)
  • 1 1 tbsp raw honey
  • 2½ 2½ cups arugula or other leafy greens (75 grams)
  • or or maple syrup
  • 1 1 cup tomatoes
  • 2 2 lemons
  • 1 1 cup cucumber
  • 1 1 bunch fresh cilantro

Instructions

  1. Steam the potatoes. In cubes. Let them cool.
  2. Juice the lemons. Press the garlic. Blend the lemon juice with the honey or maple syrup, garlic and cilantro.
  3. Mix the dressing with the potatoes.
  4. Mix in the arugula. Cut the tomatoes and cucumber and mix in as well.
