Potato salad with cilantro avocado dressing
Lovely simple salad with the dressing as the main star of the recipe: with pureed avocado, lemon and cilantro (or parsley). Mix it with leafy greens of your choice. I had watercress.
Ingredients
- 4 cups potato in cubes (600 grams)
- 1 avocado
- 1 handful tomatoes dried
- 2½ cups watercress or other leafy greens (75 grams)
- 1 lemon
- 1 handful black olives like Kalamata
- 1 bunch cilantro fresh
- 1 handful capers
- 2 pinches sea salt to taste, but for MM as low as possible, Celtic variety
- 1 tbsp water
Instructions
- Steam the potatoes. In cubes, in their jackets. Let them cool.
- Mix the avocado with the lemon juice, cilantro, a tablespoon of water and two pinches of salt.
- Mix the avocado mixture with the potatoes.
- Mix in the watercress or other leafy greens.
- Place on the plates and top with the sundried tomatoes, olives and capers.
