Potato salad with spring onion, radishes and orange honey dressing

Quick and easy to make potato salad with a sweet chili dressing made from orange and honey.

Ingredients

  • 1½ cup potato
  • 8 radishes
  • 2 or 3 scallion, green or spring onion
  • 1 tbsp chili flakes
  • ½ orange
  • 2 tbsp raw honey
  • 2 pinches celtic sea salt or to taste, for MM as low as possible

Instructions

  1. Wash the potatoes thouroughly and remove bad parts. Cut into pieces. Leave the skin on.
  2. Steam the potatoes and let them cool down.
  3. Wash and cut the radishes and spring onions. Mix with the potatoes.
  4. Mix the chili flakes with the juice of the half orange and the honey. Mix with the potatoes.

Notes

  • You can also keep cooked or steamed potatoes overnight in the fridge to use the next day.
