Ingredients
- 5-6 red potatoes
- ¼ teaspoon garlic salt
- ¼ teaspoon onion powder
- 1 teaspoon dry oregano
- ½ teaspoon dry basil
- 3 tablespoons olive oil
- Dash of salt & pepper
Instructions
- Preheat the oven to 400 degrees F.
- Using a mandolin, thinly slice the potatoes. If you don't have a mandolin, use a sharp knife to slice the potatoes evenly.
- Toss potatoes with oil and garlic salt, onion powder, oregano, basil, salt and pepper.
- Stack potato slices in a muffin tin or simply on top of each other on a baking sheet. If you use muffin tins, you may need to trim the potatoes to make them fit. Either way works.
- Bake for approximately 40-45 minutes.
- Remove and let cool. Garnish with fresh parsley, if desired.

- While a mandolin is the easiest way to get perfectly thin, even slices, not everyone has one sitting around in their kitchen. If you're slicing by hand, take your time and focus on keeping your slices as consistent as possible.
- Whether you are using a mandolin or a sharp knife, be careful and watch your fingers!
- Stacking the slices in a muffin tin is easier, as you don't have to worry about them falling over.
- While the spice blend in this recipe is fabulous, don't be afraid to play around and change it up.
