Prawn and Spinach Pasta

Prawn and Spinach Pasta (Shrimp) with a chilly kick and a touch of parmesan, a quick dish that is ready in under 20 minutes, ideal for a midweek dinner when time is ever so precious. Flavourful and colourful, this homemade pasta recipe is simple, but absolutely delicious.

Ingredients

  • ¼ packet Spaghetti (125 g)
  • 200 g king prawns (shimp) (1 cup)
  • ½ red chilli
  • 1 cup fresh baby spinach
  • 2 tomatoes
  • 4 garlic cloves
  • A pinch of pepper
  • 1 tablespoon olive oil
  • 2 tablespoon grated Parmesan cheese

Instructions

  1. Cook the spaghetti according to the packet instructions.
  2. Drain the water, and set aside.
  3. Heat up the oil, add the peeled and chopped garlic and chopped chilli pepper.
  4. Fry for 30 seconds so that the garlic can release its flavour, then add the prawns and cook for 2-3 minutes until they change their colour to pink.
  5. Add the chopped tomatoes and spinach, and leave to cook for a further 1 minute so the spinach can wilt.
  6. Mix in the spaghetti, season with pepper .
  7. Sprinkle some parsmesan cheese and remove from the heat.
  8. Serve hot!
