Preserved Wild Garlic (as Paste)
Preserved Wild Garlic Paste is made by blending wild garlic leaves with salt and vegetable oil, creating a smooth, flavorful condiment. This paste captures the fresh, sharp taste of wild garlic and extends its usability through preservation in oil. The texture is smooth enough for use as a spread, sauce base, or seasoning addition.
Ingredients
- 250 g wild garlic 9 oz, Note 1
- 30 g salt 0.6 oz/ 5 teaspoons, fine sea salt
- 200 ml vegetable oil 7 fl. oz/ scant 1 cup, Note 2
Instructions
- Clean the leaves thoroughly, one at a time, under rather hot running water. Dry them well. Chop them roughly.250 g wild garlic/ 9 oz
- Blend with the salt and oil until rather smooth, scraping the walls of the food processor if necessary.30 g fine sea salt/ 5 teaspoons + 200 ml vegetable oil/ scant 1 cup
- Transfer to small jars.
Notes
- Blend small amounts using an immersion blender, and larger amounts with a food processor for best texture.
- Use mild vegetable oils such as sunflower or canola to preserve the wild garlic's flavor.
