Preserved Wild Garlic (as Paste)

Preserved Wild Garlic Paste is made by blending wild garlic leaves with salt and vegetable oil, creating a smooth, flavorful condiment. This paste captures the fresh, sharp taste of wild garlic and extends its usability through preservation in oil. The texture is smooth enough for use as a spread, sauce base, or seasoning addition.

Description

The recipe calls for thoroughly cleaned wild garlic leaves that are roughly chopped and combined with fine sea salt and vegetable oil, then blended until smooth. The salt acts as a preservative and enhances the garlic flavor, while the oil keeps the mixture emulsified and moist. This method retains the bright green color and pungent aroma of the wild garlic while extending its shelf life when stored in jars.

The paste can serve as a base for dressings, marinades, or simply spread on bread. The flavor is fresh and garlicky with a slight oiliness that mellows the sharpness. Preparation with a food processor works best for larger batches, while smaller amounts can be blended with an immersion blender for better consistency.

Using mild vegetable oils like sunflower or canola is recommended to avoid overpowering the wild garlic's flavor. The paste can be kept refrigerated and used as a convenient way to add wild garlic's distinctive taste to dishes year-round.
