Ingredients
- 2 ¾ 2 ¾ cups all-purpose flour
- 1 1 teaspoons baking powder
- ½ ½ teaspoon sea salt
- 1 1 cup butter at room temperature
- ½ ½ cup brown sugar packed
- ½ ½ cup granulated sugar
- 2 2 teaspoons pure vanilla extract
- 1 1 large eggs
- Red, orange, yellow, green, blue, and purple food coloring
Instructions
- Preheat the oven to 350 degrees. In a medium-sized bowl, whisk the flour, baking powder, and salt.
- In a large bowl, use an electric beater to beat the butter and both sugars until light and fluffy, about 2 minutes. Add the egg and vanilla and beat to combine.
- Add the dry ingredients to the wet ingredients and beat, scraping the sides of the bowl a few times with a rubber spatula, until a stiff dough forms.
- Divide the dough into 6 small bowls. Add a few drops of the food coloring to the bowls, one color per bowl, and stir until the color is incorporated.
- Working with one color at a time put 1 teaspoon of the dough on 9 evenly spaced spots on one of the baking sheets. Next, put another teaspoon of another color of dough so it touches the first color. Repeat until each cookie has all 6 colors.
- Bake the cookies for 9-10 minutes. Make sure not to overcook them or the colors will start to fade. To make the cookies perfectly round, as soon as they come out of the oven, place a cup slightly larger than the cookie over the top and swirl it around gently. Transfer the cookies to a cooling rack and let them cook completely before you store them.

Notes
- If the dough feels a bit sticky, it's likely that it's too warm. This can happen as it takes a bit of time to color the dough and piece together the cookies. If it's sticky, pop the unbaked cookies into your fridge for 10 minutes.
