Protein Baked Oatmeal

Ingredients

  • 2 cups old fashioned rolled oats
  • ½ cup vanilla protein powder I used Sun Warrior
  • 2 cups unsweetened almond milk or any dairy-free milk
  • ¼ cup peanut butter or any nut butter
  • 2 large eggs or flax eggs
  • 3 Tablespoons maple syrup
  • 1 Tablespoon coconut oil melted
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • ½ cup fresh blueberries plus more for topping
  • nut butter for drizzling on top

Instructions

  1. Preheat oven to 375°F and spray a 8-inch square baking dish with cooking spray.
  2. In a large bowl, mix together the oats, protein powder, almond milk, peanut butter, eggs, maple syrup, coconut oil, vanilla and salt.
  3. Stir in blueberries and carefully pour oatmeal mixture into the prepared baking dish. Top with additional blueberries.
  4. Bake for 35-40 minutes or until center is set. Remove from the oven and let cool for a few minutes. Portion and serve with a drizzle of nut butter.
