Ingredients
- 8 ounces cream cheese softened
- ⅓ cup + 2 teaspoons granulated sugar divided
- 1 large egg + 1 egg yolk room temp
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- ½ teaspoon lemon juice fresh squeezed
- 2 sheets puff pastry thawed
- splash of water
Instructions
- Preheat the oven to 400°F. Line two sheet trays with parchment paper.
- In a medium-sized bowl mix together the cream cheese, ? cup sugar, egg yolk, vanilla, lemon zest, and lemon juice until smooth with an electric hand mixer, set aside.
- On a clean work surface place a piece of puff pastry, use a rolling pin to smooth out the pastry so there are no creases. Cut the pastry into 4ths. Place them on one of the prepared baking sheets. Take the corners and fold them in. Place 1 & ½ tablespoons of the filling in the center. Repeat with the remaining pastry and filling.
- Whisk together the egg and splash of water. Brush the exposed pastry with the egg wash. Sprinkle the remaining 2 teaspoons of sugar over each pastry.
- Bake for 16-18 minutes until puffed the pastry is golden brown. Place on a wire rack to cool for 10 minutes. The danishes will deflate while cooling.
