Puff Pastry Tomato Tart

Ingredients

  • 1 puff pastry sheet
  • 1 egg beaten
  • 1 cup Parmesan Cheese finely grated
  • 5.2 ounces soft cheese I use Boursin, with garlic and herb
  • 4 tomato thinly sliced
  • ½ cup Italian parsley chopped roughly
  • ¼ cup Parmesan Cheese shaved
  • salt to taste
  • black pepper to taste

Instructions

  1. Thaw the pastry sheets until softened, but still cold.
  2. Preheat the oven to 425F.
  3. Place your pastry sheet on either a stoneware baking sheet, or on a parchment lined sheet.
  4. Use a rolling pin to gently flatten the pastry so it is smooth.
  5. Cut strips from all 4 sides of each pastry sheet, and brush the pastry with egg.
  6. Add the strips back to the edges of the pastry sheet, and press them down to adhere
  7. Prick entire surface with a fork.
  8. Sprinkle with parmesan cheese.
  9. Bake, for 15 minutes until puffed and golden.
  10. Mix together the goat cheese, garlic and Italian seasoning, and smear over entire surface of the pastry.
  11. Top with tomatoes, and sprinkle with parsley and extra parmesan.
  12. Sprinkle with salt & pepper to taste.
  13. Cut into slices.
  14. Devour.

  • Use ripe, fresh tomatoes for the best flavor and texture in the tart.
  • Soft cheeses like Boursin or herb-seasoned goat cheese create a creamy, flavorful base layer.
  • Basil, rosemary, and Italian parsley add complementary herb notes; feel free to experiment.
  • If puff pastry is unavailable, naan, flatbread, or pizza dough work as alternative bases.
  • Brush the pastry edges with beaten egg for a golden, crisp crust.
