Pulled Pork Tacos

Pulled Pork Tacos are a real crowd pleaser. Tender, juicy slow cooked pork with fresh, zingy toppings all in a soft tortilla wrap is simply irresistible.

Ingredients

  • 4 Corn tacos
  • 160 g pulled pork
  • 130 g slaw
  • 75 g pickled red onions
  • 5 g fresh coriander (cilantro) finely chopped
  • 50 g feta crumbled
  • 1 lime juice only

Instructions

    Cup of Yum
  1. Divide 130 g Slaw between 4 Corn tacos.
  2. Divide 160 g Pulled pork between them.
  3. Add 75 g Pickled red onions.
  4. Finish with 50 g Feta, 5 g Fresh coriander (cilantro) and the juice of 1 Lime.

Notes

  • Diced avocado is another great addition to these tacos.
  • To warm the tortillas, heat a dry pan over medium heat and cook the tortillas for 30 seconds on each side. Alternatively, you can wrap the tortillas in foil and heat them in the oven at 180°C/160°C(fan)/350°F/Gas 4 for 10 minutes.
  • These are best served and eaten straight away.
  • Make sure you have the pickled red onions made ahead of time to make this even easier.
  • Don't go too heavy on sauce in these tacos, as you don't want them to be soggy.
