Pumpkin Baked Oatmeal
This simple recipe for Pumpkin Baked Oatmeal turns a classic favorite into a great fall breakfast. They are loaded with old fashioned oats, pumpkin puree, and pumpkin spice and a few other ingredients blended up and then baked to perfection.
Ingredients
- 2 cups old fashioned oats
- 1 cup pumpkin puree
- 4 large egg
- ¼ cup maple syrup
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking powder
- 2 tablespoons turbinado sugar optional
- 2 tablespoons pumpkin pie spice optional
Instructions
- Preheat the oven to 350° F and grease four 6-ounce ramekins with non-stick cooking spray or butter.
- Add all of the ingredients to a high speed blender or food processor and blend until completely smooth. You can also use an immersion blender. Mix by hand and have a more chunky oatmeal texture,
- Divide the batter between the prepared ramekins.
- Optional topping: Mix turbinado sugar and pumpkin pie spice together in a small bowl and sprinkle it over the batter.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Serve warm, topped with yogurt or whipped cream.
Notes
- Instead of using ramekins, add the batter to a 8x8 or 9x13 baking dish.
- Add chopped walnuts, pecans, almonds
- Use ground cinnamon instead of pumpkin pie spice if desired.
- Add chocolate chips to the batter.
- Use quick oats if you'd prefer.
- Be sure to use 100% pumpkin puree, not the pumpkin pie filling that is sweetened.
- This baked oatmeal is not overly sweet. If you like to sweeten it more. add additional ½ cup of maple syrup or brown sugar.
