  • 4 large egg
  • ¼ cup maple syrup
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 2 tablespoons turbinado sugar optional

  4. Optional topping: Mix turbinado sugar and pumpkin pie spice together in a small bowl and sprinkle it over the batter.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. Serve warm, topped with yogurt or whipped cream.

Notes

  • Instead of using ramekins, add the batter to a 8x8 or 9x13 baking dish.
  • Add chopped walnuts, pecans, almonds
  • Use ground cinnamon instead of pumpkin pie spice if desired.
  • Add chocolate chips to the batter.
  • Use quick oats if you'd prefer.
  • Be sure to use 100% pumpkin puree, not the pumpkin pie filling that is sweetened.
  • This baked oatmeal is not overly sweet. If you like to sweeten it more. add additional ½ cup of maple syrup or brown sugar.
