Ingredients

  • 1 pound chicken breast diced
  • 1 small pumpkin peeled, seeded, and cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon Turmeric
  • 14 ounces coconut milk
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • salt and pepper to taste
  • Fresh parsley or cilantro for garnish optional

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and ginger, and cook for an additional minute.
  4. Add the curry powder, cumin, coriander, and turmeric to the skillet. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
  5. Add the diced chicken to the pot and cook until browned on all sides, about 5-7 minutes.
  6. Stir in the pumpkin cubes, coconut milk, and chicken broth.
  7. Bring to a simmer, reduce the heat, and cook until the pumpkin is tender and the chicken is fully cooked, about 20 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley or cilantro if desired, and serve with rice or naan.
