Ingredients
FOR THE CHILI:
- 1 lb. ground beef
- 1 can pumpkin puree 15 oz can
- 1 can tomato sauce 29 oz can
- 2 cans pinto beans 15 oz cans, do not drained
- 2 cups beef broth
- 2 Tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ onion diced
- 1 red bell pepper diced
- 2 teaspoons minced garlic
FOR THE TOPPINGS:
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 2 jalapeños sliced
Instructions
- Brown the ground beef in a large stock pot or dutch oven. Drain off the excess grease.
- Then stir in the remaining chili ingredients. Bring the mixture to a low boil. Cover and simmer for 20-30 minutes until the flavors are incorporated and the vegetables are soft.
- Serve warm with your favorite chili toppings and enjoy!
