Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 cup oat flour or all purpose flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon allspice
  • ⅛ teaspoon nutmeg
  • 2 large eggs
  • ½ cup honey
  • ⅓ cup coconut oil or butter
  • 1 cup pumpkin puree
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line muffin tin with liners.
  2. Mix all dry ingredients together is a medium size bowl.
  3. Mix all wet ingredients together in another medium size bowl.
  4. Gently stir the wet ingredients into the dry ingredients careful not to over mix.
  5. Scoop spoonfuls of the mixture into muffin liners so they are all evenly filled.
  6. Gently fold in the chocolate chips but be careful not to overmix or they will be more dense.
  7. Bake for about 30 – 40 minutes or or until a toothpick inserted into the center comes out clean.
  8. Cool 10-15 minutes.
