Pumpkin Chocolate Chip Muffins

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 15 oz pumpkin puree
  • 1 1/2 cup canola oil
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups chocolate chips

Instructions

  1. Preheat over to 400°F. Prepare ingredients.
  2. In a large bowl, beat the eggs with sugar. Stir in oil and pumpkin puree until well-combined.
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt. Stir to combine.
  4. In small portions, stir the dry ingredients into the wet ingredients.
  5. Fold the chocolate chips into the batter.
  6. Scoop equal amounts of batter into a lined muffin pan.
  7. Bake for 15 minutes or until the tops are firm to the touch. Let the muffins cool for a couple of minutes. Remove from the pan and enjoy!
