Ingredients
- 4 eggs
- 2 cups sugar
- 15 oz pumpkin puree
- 1 1/2 cup canola oil
- 3 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups chocolate chips
Instructions
- Preheat over to 400°F. Prepare ingredients.
- In a large bowl, beat the eggs with sugar. Stir in oil and pumpkin puree until well-combined.
- In a separate bowl, combine flour, baking powder, baking soda, and salt. Stir to combine.
- In small portions, stir the dry ingredients into the wet ingredients.
- Fold the chocolate chips into the batter.
- Scoop equal amounts of batter into a lined muffin pan.
- Bake for 15 minutes or until the tops are firm to the touch. Let the muffins cool for a couple of minutes. Remove from the pan and enjoy!
