Pumpkin Cranberry Bars
Pumpkin Cranberry Bars are moist baked squares made with pumpkin puree, eggs, sugar, oil, flour, cinnamon, and leavening agents, topped with dried cranberries. Ingredients
- 2 egg large
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 cup pumpkin puree
- 1 1/4 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dried cranberries , chopped, divided
Instructions
- Preheat oven to 350 degrees and spray an 8x8 baking pan with baking spray.
- In a large mixing bowl, whisk together the eggs, sugar, oil, pumpkin and 1/3 cup of cranberries until well combined.
- In another bowl sift together the flour, cinnamon, baking powder, baking soda and salt.
- Add flour mixture to pumpkin mixture and whisk until just combined.
- Pour mixture into baking dish and spread evenly.
- Top with remaining cranberries.
- Bake for 25-30 minutes.
- Cool completely before cutting and serving.
