Pumpkin Cranberry Bars
Description
This recipe creates Pumpkin Cranberry Bars by combining eggs, sugar, vegetable oil, pumpkin puree, and a portion of chopped dried cranberries in a bowl. In a separate bowl, dry ingredients including flour, cinnamon, baking powder, baking soda, and salt are sifted together. The dry mixture is then blended into the wet ingredients until just combined to avoid overmixing.
The batter is poured into a greased 8x8 baking pan and spread evenly. Additional dried cranberries are sprinkled on top before baking at 350 degrees Fahrenheit for 25-30 minutes. Once fully baked and cooled, the bars are cut into squares. The pumpkin keeps the bars moist with a dense but tender texture, and cinnamon adds a warm spice that complements the natural tartness of the cranberries.
These bars are suitable as a portable breakfast or snack option during the cooler months, offering a balance of sweet and tart flavors with soft chewiness from the dried fruit topping.
