  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 1 1/4 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries , chopped, divided

Instructions

  1. Preheat oven to 350 degrees and spray an 8x8 baking pan with baking spray.
  2. In a large mixing bowl, whisk together the eggs, sugar, oil, pumpkin and 1/3 cup of cranberries until well combined.
  3. In another bowl sift together the flour, cinnamon, baking powder, baking soda and salt.
  4. Add flour mixture to pumpkin mixture and whisk until just combined.
  5. Pour mixture into baking dish and spread evenly.
  6. Top with remaining cranberries.
  7. Bake for 25-30 minutes.
  8. Cool completely before cutting and serving.
