Pumpkin Curry Soup

This homemade pumpkin curry soup is made from scratch and has just the right amount of spice.

Ingredients

  • 1 cup chopped white onions
  • 1 1/2 teaspoons curry powder
  • 2 tablespoons butter
  • 16 ounces pumpkin puree
  • 2 cups chicken or vegetable stock
  • 1/4 cup heavy cream
  • squeeze of lime juice

Instructions

  1. In a pot over medium heat, sauté the onions and curry powder in butter until the onions become translucent.
  2. Add the pumpkin puree and stir.
  3. Add the chicken broth and heat until the soup just begins to bubble.
  4. Add the heavy cream and stir well.
  5. Serve each bowl with a squeeze of lime juice.
