Pumpkin Energy Balls

Today I want to share one way to deal with all the candy you end up with at Halloween as well as some real food for Halloween or fall-themed parties.

Ingredients

  • 1 1/2 cups oats rolled
  • 1/2 cup pumpkin puree not pumpkin pie mix
  • 1/4 cup almond butter
  • 1/4 cup Pepitas unsalted (shelled pumpkin seeds)
  • 2 - 3 tablespoons pure maple syrup
  • 2 tablespoons unsweetened coconut flakes
  • 2 teaspoons pumpkin pie spice
  • 2 tablespoons chocolate chips optional - I used Enjoy Life

Instructions

    Cup of Yum
  1. Use a spoon to mix all ingredients together in a medium mixing bowl. Place in the fridge for 30 minutes (or longer).
  2. Remove from the fridge and form balls with your hands. They don't roll very easily, but instead you may have to squeeze them into the shape that you want them.
  3. Store in an airtight container in the fridge.

Notes

  • Gluten-free if using gluten-free oats. 2. Dairy-free if using dairy-free chocolate chips. 3. We recommend organic ingredients when feasible.
