Pumpkin energy bites

Super easy to make, these little bites are the perfect guilt-free pick-me-up.

Ingredients

  • ¼ cup Medjool dates 55g, pitted weight
  • ¼ cup pumpkin puree 65g
  • ¼ cup oat bran 25g
  • ¼ cup quick oats 20g
  • ¼ cup almond flour 22g
  • 1 tablespoon chia seeds
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger

Instructions

  1. Roughly chop the dates and put them in a food processor with the pumpkin. Blend until fairly smooth. Add the remaining ingredients and pulse until well mixed. Try not to over-mix as you'll break up the oats which add texture.
  2. Take roughly 1tbsp spoonfuls at a time from the mixture and roll into balls. Place on a baking sheet or lined plate ad refrigerate until ready to use. They will keep a couple days in the fridge, or you can also freeze them.
