Pumpkin Hot Cocoa

Simple pumpkin and earthy pumpkin spice are the stars in this easy, creamy, comforting pumpkin hot cocoa recipe.

Ingredients

  • 2 cups unsweetened plain almond or cashew milk
  • ¼ cup plain pumpkin puree
  • ¼ cup (1 scoop) THM Chocolate Whey Protein Powder (optional but adds creaminess; Vanilla Bean or Cookies-n-Cream flavors work also)
  • ¼ cup Lakanto Classic or equivalent sweetener (more or less to taste)
  • ⅓ cup unsweetened cocoa powder
  • 2 tablespoons heavy cream (optional; makes the recipe an S; adds creaminess and flavor)
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • pinch mineral salt
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon maple flavoring (optional)

Instructions

    Cup of Yum
  1. In a small to medium saucepan, whisk together the milk, pumpkin, protein powder, sweeteners, cocoa powder, pumpkin pie spice, cinnamon, and salt.
  2. Bring to a boil over medium-high heat, stirring frequently to prevent boiling over.
  3. Remove from heat. Add in the vanilla and maple flavoring.
  4. Serve with homemade marshmallows or top with whipped cream.
