Ingredients

  • 3 tablespoons mini chocolate chips optional

  1. In a microwave-safe mug, combine the flour, sugar, baking powder, kosher salt, and pumpkin spice.
  2. Stir in the pumpkin puree, vegetable oil, and vanilla extract until the mixture is smooth and well-combined.
  3. Fold in the chocolate chips (if using), ensuring they are evenly distributed throughout the batter.
  4. Microwave on high for about 1 minute and 30 seconds to 2 minutes. The cake should rise and be set in the middle. (Microwave times may vary, so start checking at 1 minute and 30 seconds).
  5. Allow the mug cake to cool for a few minutes before enjoying, as it will be very hot.
  6. Serve as is or add a scoop of ice cream and a drizzle of chocolate or caramel sauce. Enjoy!
