Pumpkin Oatmeal Chocolate Chip Cookies

These pumpkin oatmeal chocolate chip cookies make a fun twist on chocolate chip cookies.

Ingredients

  • 1 stick butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 cup pumpkin puree about 1/2 a 15 oz can
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup oatmeal
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin spice *see notes for substitution
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips semi sweet or dark chocolate

Instructions

  1. Preheat the oven to 350.
  2. Beat the butter in a mixing bowl until light and fluffly.
  3. Add the white and brown sugar and continue to mix until well combined.
  4. Mix the pumpkin puree and vanilla into the bowl and beat for 2 minutes.
  5. Mix the flour, oatmeal, baking soda, pumpkin pie spice and salt together in a small bowl.
  6. Add the flour mixture and mix until just combined. The batter will be wetter than standard chocolate chip cookie batter.
  7. Stir in the chocolate chips.
  8. Drop by rounded spoonfuls onto ungreased cookie sheet, and bake for 10-12 minutes. Bake longer for a crispier cookie.

Notes

  • If you don't have pumpkin spice substitute 1 1/2 teaspoons of cinnamon and 1/2 teaspoon of nutmeg. Or use my easy pumpkin pie spice recipe to make your own.
  • Don't store these cookies tightly covered, they will get mushy.
