Ingredients

  • ½ cup softened unsalted butter
  • ¾ cup light brown sugar
  • 2 large eggs
  • 2 tablespoons pumpkin puree
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ½ teaspoon pumpkin pie spice
  • ½ cup all-purpose flour
  • 1 cup Chopped Pecans

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Spray non-stick cooking spray into a muffin pan and set aside.
  2. In a large bowl, add ½ cup softened unsalted butter, ¾ cup light brown sugar, and 2 large eggs. Using an electric hand mixer, cream until light and fluffy.
  3. Mix in 2 tablespoons pumpkin puree, ½ teaspoon vanilla extract, ⅛ teaspoon salt and ½ teaspoon pumpkin pie spice.
  4. Slowly fold in ½ cup all-purpose flour and ¾ cup chopped pecans.
  5. Pour the batter evenly into the muffin pan. Top with the remaining ¼ cup chopped pecans.
  6. Bake for 20 minutes or until an inserted toothpick comes out clean.
