Pumpkin Pecan Pie Muffins – Just like a classic pecan pie, but even better!

Ingredients
- ½ cup softened unsalted butter
- ¾ cup light brown sugar
- 2 large eggs
- 2 tablespoons pumpkin puree
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- ½ teaspoon pumpkin pie spice
- ½ cup all-purpose flour
- 1 cup Chopped Pecans

Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray non-stick cooking spray into a muffin pan and set aside.
- In a large bowl, add ½ cup softened unsalted butter, ¾ cup light brown sugar, and 2 large eggs. Using an electric hand mixer, cream until light and fluffy.
- Mix in 2 tablespoons pumpkin puree, ½ teaspoon vanilla extract, ⅛ teaspoon salt and ½ teaspoon pumpkin pie spice.
- Slowly fold in ½ cup all-purpose flour and ¾ cup chopped pecans.
- Pour the batter evenly into the muffin pan. Top with the remaining ¼ cup chopped pecans.
- Bake for 20 minutes or until an inserted toothpick comes out clean.
