Pumpkin Pie

Pumpkin pie is a North American specialty that is traditionally eaten during the holidays season beween Halloween and Thanksgiving.

Ingredients

For the dough
  • 2 cups all-purpose flour
  • 8 tablespoons unsalted butter (at room temperature), diced
  • 3 tablespoons sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 egg yolk
  • ¼ cup water
For the filling
  • 1½ cup pumpkin flesh , diced
  • 3 tablespoons butter
  • 3 eggs
  • ½ cup brown sugar
  • 1½ oz. molasses
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon grated nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 cup evaporated milk
  • ⅓ cup sour cream (or creme fraiche)
  • 2 oz. hazelnuts (or almonds), ground

Instructions

  1. Take the butter out of the refrigerator 2 hours before starting the recipe. It should be soft but not melted.
  2. Mix dry ingredients: flour, salt, and spices.
  3. Add the softened butter and knead for 4 minutes.
  4. Stir water and egg yolk to bind the dough.
  5. Mix quickly and form a ball.
  6. Knead the dough with the palm of your hand for 3 minutes on a floured surface.
  7. Transfer the dough to a pie dish.
  8. Prick the dough with a fork and refrigerate.
Filling
  1. Heat the butter and fry the pumpkin, stirring occasionally until cooked. If necessary, add a little water.
  2. Mash.
  3. In a mixer bowl, beat the pumpkin puree and eggs together.
  4. Add sugar, molasses, cinnamon, nutmeg, ginger, vanilla, and salt and mix well.
  5. Stir in evaporated milk and sour cream to the pumpkin preparation in three stages. Mix well after each stage.
  6. Preheat oven to 430F/220C.
  7. Pour the pumpkin batter onto the dough.
  8. Bake 10 minutes then reduce oven temperature to 350F/170C, and continue baking for about 50 minutes (until a toothpick inserted in the center of the pie comes out clean).
  9. Allow pie to cool before serving.
