Pumpkin Pie Baked Oatmeal

Pumpkin Pie Baked Oatmeal made from pumpkin, spices, a cream cheese "frosting", and oats. This is a great recipe to put you in the Fall spirit with its autumnal flavors.

Ingredients

  • 3 cups old fashioned oats
  • 2 coops vanilla protein powder
  • 1 tsp baking powder
  • 1 can pumpkin
  • 8 tbsp syrup
  • 3 eggs
  • 1 cup 2% milk
  • 1 cup cottage cheese
  • 1 tsp pumpkin pie spice
  • ½ tsp salt
For the Frosting
  • ½ cup cream cheese
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp maple syrup

Instructions

For the Oatmeal Bake
    Cup of Yum
  1. Preheat your oven to 350 °F (177 °C).
  2. In a blender, blend together the pumpkin, milk, cottage cheese, eggs, syrup, salt, baking powder, protein powder, spices and pumpkin pie spice until smooth.
  3. Spray a 13"x9" pan with oil and add your oat. Pour in the pumpkin mix and stir thoroughly.
  4. Bake for 50-60 minutes.
For the Frosting
  1. Mix the cream cheese, yogurt, and maple syrup.
  2. Place into a ziplock bag (or piping bag) and set aside.
Plating
  1. This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces. Once the oatmeal bake has cooled a bit, top with the frosting. I frost my oatmeal the day I cook it, it is probably better to keep your frosting in the fridge and frost the day of eating but it doesn't make a huge difference.
