Pumpkin Rice

Ingredients

  • 2 tablespoons butter
  • ½ sweet onion diced
  • 1 tablespoon minced garlic 
  • ½ cup pumpkin puree
  • ½ cup canned coconut milk
  • 1¼ cup broth
  • 1 cup jasmine rice

Instructions

  1. In a small pot over medium heat, melt the butter and add the diced onions. Cook for 2 minutes before adding the minced garlic and cook for another minute.
  2. Add the pumpkin puree, coconut milk, and broth. Stir to combine and bring the mixture up to a boil.
  3. Add the rice and lower the heat. Give it a mix and let the mixture come back up to a boil. Cover with a lid for 15 to 17 minutes, stirring at the halfway point.
  4. Remove the pot from the heat, keep the lid on the pot, and let the rice rest for 10 minutes. Fluff the rice before serving.
