Pumpkin Scones

Pumpkin Scones are a tasty easy fall coffee shop treat! Flaky and soft pumpkin scones with pumpkin puree and sour cream, topped with a sweet cinnamon glaze.

Ingredients

  • 1/2 cup pumpkin puree
  • 2 cups flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter , frozen and diced
  • 1/2 cup sour cream
  • 1 large egg
  • 1/4 cup heavy cream
  • 2 tablespoons coarse sanding sugar
  • 2 cups powdered sugar
  • 2-3 tablespoons whole milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Add pumpkin puree to a cheesecloth or multiple layers of paper towels and squeeze as dry as possible by forming a ball around the puree and twisting the top to squeeze liquid out.
  3. Add flour, 1/3 cup sugar, baking powder, baking soda, cinnamon and salt to a large food processor.
  4. Pulse a couple of times to "sift".
  5. Add butter and pulse until it resembles small crumbs.
  6. Add sour cream and egg and pulse until large clumps form.
  7. Remove to a flour covered surface and gently add in pumpkin puree and form into a ball.
  8. Pat gently into an 8 inch circle with your hands.
  9. Cut into 8 wedges.
  10. Place onto baking sheet.
  11. Cover lightly with plastic wrap and refrigerate for 20 minutes.
  12. Brush tops with heavy cream and sprinkle coarse sanding sugar over the dough.
  13. Bake for 16-18 minutes.
  14. Cool for 5 minutes before removing from baking sheet.
  15. Whisk together powdered sugar, milk and cinnamon in a small bowl.
  16. Drizzle over the scones and let dry for 20 minutes.
