Ingredients

  • 1/3 cup pumpkin 89 grams, puree
  • 1/2 teaspoon pumpkin pie spice (2 grams)
  • 4 to 5 Medjool dates pitted (about 75 grams, soft
  • 2 tablespoons hemp hearts (optional; 18 grams)
  • 3/4 cup almond milk (156 grams)
  • 5 ice 174 grams, large cubes

Instructions

  1. Combine the pumpkin, spice, dates, hemp hearts (if using), and almond milk in the blender. Blend until completely smooth.
  2. Add in the ice, and blend again until the smoothie has a slushy texture. Serve right away for the best taste and texture.
  3. Leftover smoothie can be stored in an airtight container in the fridge for up to 24 hours, but the texture will be very runny.

Notes

  • If substituting bananas for dates as sweetener, use frozen bananas and add maple syrup to enhance the pumpkin pie flavor.
  • You may sweeten the smoothie using only maple syrup, adjusting the amount between 1 to 2 tablespoons to taste.
  • Add additional ice cubes if you prefer a thicker, more slushy texture in your smoothie.
  • Store leftover smoothie in an airtight container in the refrigerator for up to 24 hours, but expect a thinner consistency.
