Pumpkin Spice Protein Balls

Ingredients

  • 1 cup raw almonds
  • 1/2 cup raw walnuts
  • 1/2 cup raw pumpkin seeds
  • 10 large pitted medjool dates
  • 2/3 cup pumpkin puree
  • 1/2 cup unsweetened almond butter
  • 3 Tbsp pure maple syrup or honey, optional
  • 2 scoops Bob's Red Mill Vanilla Protein Powder
  • 1 Tbsp pumpkin pie spice
  • 1/2 tsp sea salt to taste
  • 2/3 cup chocolate chips optional

Instructions

  1. Add all ingredients to a food processor and process! You can create your desired consistency by leaving the mixture somewhat chunky or processing it into a paste.
  2. If you’re adding chocolate chips, stir them into the mixture once it has processed.
  3. Transfer the mixture to a container and refrigerate at least 1 hour to allow it to set up.
  4. Form energy balls and enjoy! Store in a sealable container or zip lock bag in the refrigerator or freezer.
