Pumpkin Waffles Recipe
Description
The Pumpkin Waffles Recipe mixes fresh eggs and sugar with pumpkin puree, milk, and vanilla extract to form the wet ingredients. The dry mix of all-purpose flour combined with baking powder, pumpkin pie spice, ground cinnamon, and salt is folded in just until moistened to maintain a light texture. Melted unsalted butter enriches the batter, adding moisture and flavor.
Cooking in a greased waffle iron yields golden, crisp-edged waffles while keeping a tender crumb inside. The warmth of pumpkin spices complements the natural sweetness, providing familiar autumnal notes without overpowering the pumpkin base.
These waffles serve well with traditional toppings like maple syrup or fresh fruit and can be made in different waffle iron styles, adjusting batter quantity accordingly. The recipe makes eight standard square waffles, perfect for sharing at breakfast or brunch.
The batter’s slight lumpiness is normal and helps maintain fluffiness. Using gluten-free flour is an option to accommodate dietary needs, but proper flour measurement is important for consistency.
Ingredients
- 2 egg large
- 3 Tbsp granulated sugar
- 1 cup pumpkin preferably Libby’s brand, puree
- 1 cup milk whole
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour measured correctly, or use gluten-free flour to make these gluten-free
- 1 Tbsp baking powder aluminum-free
- 1 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt fine sea salt
- 6 Tbsp butter melted, unsalted
- cooking spray for greasing, nonstick
Instructions
- Preheat your waffle iron according to the manufacturer's instructions with your desired browning settings.
- In a large mixing bowl, whisk together eggs and sugar until well blended. Add pumpkin, milk, and vanilla and whisk until well blended.
- In a separate bowl, whisk together flour, baking powder, pumpkin spice, cinnamon, and salt. Whisk dry ingredients into wet ingredients, mixing just until moistened. Add in melted butter, whisking just until incorporated. The batter will be lumpy (do not over-mix).
- Grease your waffle iron grates using non-stick cooking spray.
- Ladle about 1/3 cup of batter onto the pre-heated and greased waffle maker, adding batter to the center of each waffle grid (the amount will vary based on your waffle maker, and Belgian waffles will require more batter). Cook until waffles are golden and crisp, about 4 minutes. Repeat with the remaining batter. Serve with maple syrup or your favorite waffle toppings.
Notes
- This recipe yields about 8 standard square waffles when using a classic 4-square waffle iron with about 1/3 cup of batter per waffle.
- For Belgian-style waffle makers, use more batter to fill the larger grids properly.
- Do not over-mix the batter; some lumps are fine and help keep waffles tender.
- Use gluten-free flour as a substitute if needed, but measure carefully for best results.
