Ingredients

  • ½ medium head purple cabbage thinly sliced
  • 2 medium carrots shredded
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • salt to taste
  • pepper to taste

Instructions

  1. In a large bowl, combine the thinly sliced purple cabbage and shredded carrots.
  2. In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, and honey until well blended.
  3. Pour the dressing over the cabbage and carrots. Toss well to coat evenly. Season with salt and pepper to taste.
