Ingredients
- 1 tbsp butter
- 1 tbsp flour
- ½ cup milk whole
- ½ cup tomato seeded & diced
- 1 green chiles mild or spicy, canned
- 1 ½ cups cheddar cheese shredded, sharp
- 1 ½ cups Monterey jack cheese shredded
Instructions
- Heat the butter in a large skillet over medium heat.
- Add the flour and whisk for 1 minute.
- Slowly add the milk while whisking continuously until smooth and creamy, about 3 minutes.
- Add the diced tomatoes, green chiles, cheddar cheese, and jack cheese until the mixture is completely combined and smooth (except for the tomatoes & green chiles).
- Side Note: Best when made right before serving.
