Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • ½ cup whole milk
  • ½ cup tomatoes seeded & diced
  • 1 can green chiles mild or spicy
  • 1 ½ cups sharp cheddar cheese shredded
  • 1 ½ cups Monterey jack cheese shredded

Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the flour and whisk for 1 minute.
  3. Slowly add the milk while whisking continuously until smooth and creamy, about 3 minutes.
  4. Add the diced tomatoes, green chiles, cheddar cheese, and jack cheese until the mixture is completely combined and smooth (except for the tomatoes & green chiles).
  5. Side Note: Best when made right before serving.
