Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup lemon juice about 2 lemons
- 2 tablespoons extra virgin olive oil
- 2 teaspoons lemon pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ teaspoon salt
Instructions
- Place chicken breasts in a gallon-size resealable plastic bag. Add lemon juice, olive oil, lemon pepper, basil, oregano, and salt to the bag. Shake the bag gently to ensure the chicken is evenly coated with the marinade.
- Marinate in the refrigerator for 30 minutes, or up to 8 hours for deeper flavor.
- Heat a heavy skillet over medium-high heat. Remove chicken from the marinade and place in the hot skillet. Discard leftover marinade.
- Cook chicken for 6 to 7 minutes on each side, flipping once halfway through.
- Continue cooking until the chicken reaches an internal temperature of 165°F.
- Serve hot. Optionally, garnish with freshly chopped parsley and lemon slices.

Notes
- Marinate for at least 30 minutes for great flavor, or up to 8 hours for a deeper taste. Avoid marinating longer than 12 hours to prevent mushy chicken. In a pinch? A quick 15-minute marinade works too!
- Instead of a plastic bag you can always marinate in a shallow dish. Simply whisk the marinade in a mixing bowl, place your chicken in, and pour the marinade right over.
