Quick and easy prosciutto melon salad with mozzarella

This quick and easy prosciutto melon salad with mozzarella is a delicious starter or side dish and is perfect for summer feasting.

Ingredients

  • 3 cups melon balled/cubed
  • 150 g (5oz) prosciutto
  • 300 g (10oz) mozzarella / Bocconcini
  • 3 cups arugula/rocket
For the dressing
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • salt and pepper to taste

Instructions

  1. Halve the melon then scoop out the seeds.
  2. Using a melon baller, scoop balls of melon out and place in a bowl. Alternatively, chop the melon into cubes. 
  3. Whisk together the olive oil, lemon juice, salt and pepper.
  4. Place a bed of arugula/rocket into a serving bowl then add the melon balls and mozzarella. Add the prosciutto.
  5. Pour over the dressing and serve.
